Walnut kernels from kashmir are very different to California, chilli and Chinese walnuts. They have very high oil content, which gives them the sweet taste. We have our own farms of walnuts in kashmir and these walnuts come directly from out farms. The trade of kashmiri walnuts is one of the oldest professions in the world. Walnut tree is one of the oldest species of the plants alive at present. Walnut tree of kashmir can grow upto 30 meter in height, also it cover alot of surface area, as the branches of tree are found in horizontal axis of earth. You can grow a walnut tree in kashmir very easily, but you will have to wait for 10 to 15 years before the tree gives its 1st crop. Walnuts comes in various qualities like achul, wont, kochul, kagzi, burzul, chalith doon and Boxy. All of these are kashmiri terms and I will explain them one by one
1. Achul Walnut – Whole walnut which has not been washed
2. Wonth Walnut also called banta akrot – Unbreakable walnut which are used by devotees as gift to bhagwan in mandir, it is belived that only bhagwan can break this walnut, thus this walnut is given to bhagwan
3. Kochul Walnut – Breakable walnut by a hammer
4. Kagzi Walnut – So thin shelled, that it can break by the pressure of your fingertips, such walnuts have to be packaged delicately so that they dont break during transit
5. Burzul walnut – Breakable the pressure of your teeth.
6. Chalith Walnut – This walnut is washed as soon it is removed from its husk ( The green color cover that covers the walnut)
7. Boxy Walnut – Graded Big Size Walnuts
